Description

Valle des Aigles is a collaborative wine project created by winemakers David Serodes and Boris Kovac in the Languedoc Roussillon region of southern France. The vineyards are planted on stony clay limestone and clay schist soils around Salses le Château, high enough to benefit from Mediterranean sunshine tempered by cooling breezes. Fruit is hand-picked and vinified with minimal intervention, and the wines are vegan friendly and reflect the vibrant, expressive terroir of the region. The wine is labelled as Vin de France rather than under a specific AOP, allowing for creative co-fermentation and skin-contact techniques in its production.

Cazot Orange 2023 is an orange wine made from a co fermented blend of approximately 35% Grenache Blanc, 35% Grenache Gris, 25% Muscat d’Alexandrie and 5% Macabeo. The grapes are fermented with skin contact for around 14 days, extracting natural colour and gentle tannins; about 30% of the batch sees vinification in older oak barrels. The wine shows a pale orange hue with lifted aromatics of mandarin and peach blossom, followed by flavours of citrus zest, candied peel and subtle spice on a refreshingly textured palate. Serve lightly chilled with grilled prawns, cold meats, aged Manchego or Comté cheese to complement its lively acidity and aromatic complexity.
