Description

Uivo is the personal project of Tiago Sampaio at Folias de Baco, created to showcase the purity and individuality of the Douro Valley's historic vineyards. The estate works with sustainably managed old vines using organic farming principles and a low intervention philosophy, allowing each vineyard to express its unique character. The vineyards lie at 500-600 metres above sea level on steep schist and granite derived soils, where deep-rooted vines produce wines of remarkable freshness, mineral complexity and balance. The wines are generally considered vegan friendly.

Uivo Vinhas Velhas 2023 is produced from a traditional field blend of more than 15 indigenous Douro grape varieties from vines over 70 years old, with Gouveio, Viosinho and Rabigato forming the principal components. The grapes undergo spontaneous fermentation with indigenous yeasts before ageing for approximately 12 months on the fine lees in a combination of French oak barrels and cement tanks. Bottled with minimal intervention, the wine displays aromas of citrus, orchard fruit and white flowers with subtle herbal and flinty mineral notes. Fresh, textured and vibrant, it pairs beautifully with grilled fish, shellfish, roast chicken, creamy risotto and soft cheeses.
