Nanclares Soverribas 2021
Soverribas is a barrel-aged white wine made by the Nanclares winery with the Albariño variety in the D.O. Rías Baixas (Galicia). Bodegas Nanclares is an innovative Galician winery that is using just two hectares of vineyards in Salnés (Rías Baixas) to produce world-renowned wines. To do this, owner Alberto Nanclares is committed to using minimum intervention to achieve maximum individual expression in each of his wines.
Soverribas comes from a vineyard planted with 35-year-old vines that grow on sandy loam soils with granite rock. They are cultivated using environmentally friendly agriculture that does not harm the natural balance of the terroir and the harvest is carried out manually in 15 kg boxes.
When the Soverribas grapes reach the winery, they are pressed in a pneumatic press at a low pressure. Then the resulting must ferments with native yeasts and without racking at a controlled temperature in a 2,200 litre used French oak vat. Finally, it rests on its lees for 11 months in this vat with weekly batonnage. It is bottled without clarifying and spends 5 months in the winery.
