Monte Dall'Ora Vino Nato Disobbediente 2021 - 1lt bottle

The "Vino Nato Disobbediente", literally "Born Disobedient Wine", is a blend of pergola-trained 60% Corvinone & 40% Molinara presented in a very disobedient 1lt bottle. The grapes are manually harvested, destemmed, with a light pressing to extract only the free-run juice. The fermentation is spontaneous and ambient with indigenous yeasts. The wine is subsequently aged in cement tanks for several months with natural malolactic fermentation. Very light filtration, no fining and no sulphur is used during vilification. Restrained at first, it oozes pure elegance, with forest fruits and light spice notes.
