Les Horees Bourgogne Blanc Aganippe
Les Horées is a highly regarded micro négociant and domaine founded by Catharina Mure in Burgundy. After working at Domaine de la Romanée-Conti and Domaine Leflaive, Mure established Les Horées with a focus on precise, terroir driven wines produced from carefully selected vineyard parcels farmed organically or biodynamically. The Bourgogne Blanc Aganippe is sourced from limestone and clay rich sites in Burgundy, where the cool continental climate preserves freshness and aromatic detail. Vineyard work is meticulous and largely manual, with minimal intervention both in the vineyard and cellar. The wines are generally suitable for vegans as they are produced with little or no fining and minimal sulphur additions.
Les Horées Bourgogne Blanc Aganippe NV is made from Chardonnay, with the non vintage format allowing blending across multiple harvests to maintain balance and complexity. The grapes are fermented with indigenous yeasts and aged in older French oak barrels for around 6 months, followed by additional élevage on fine lees to enhance texture and depth without excessive oak influence. Bottled with minimal intervention, the wine shows aromas of citrus peel, white peach, gingerbread and hazelnut alongside subtle smoky mineral notes. The palate is energetic yet layered, with bright acidity and a long saline finish. It pairs beautifully with roast chicken, asparagus risotto and grilled fish.
