Les Horées Bourgogne Aligoté En Coulezain comes from a tiny domaine in Burgundy founded by Catharina Sadde and her husband, working on a small scale around Volnay and Pommard. The vineyards are farmed according to organic and biodynamic principles on marl and limestone rich soils. The vines are often older, giving concentration and depth, and the domaine prioritises minimal intervention to let the terroir shine.

The wine is made entirely from Aligoté grapes. A third of the crop is destemmed and given five days’ maceration on the skins in small crates, while the other two thirds are whole cluster pressed in a basket press. Fermentation proceeds with ambient yeasts, with little or no added sulphur, and after malolactic conversion it is aged for about six months in old 350?L oak barrels before bottling. The result is crisp and mineral driven, with green apple, pear, white flower and subtle chalky notes, bright acidity and a saline finish. It pairs beautifully with fresh seafood, oysters, goat cheese, light salads or simply as a refined aperitif.
