Kamara Pure Shadow Play Assyrtiko 2022

Kamara Pure Shadow Play Assyrtiko 2022 is a dry white wine from Kamara Winery, a family run estate in the Oraiokastro Thessaloniki area of northern Greece. The Kioutsoukis family planted their vineyards on the slopes of Kamara, where clay loam and silty clay loam soils at around 140m altitude and a Mediterranean climate with cooling breezes help produce vibrant, expressive fruit. Kamara follows permaculture and biodynamic principles in the vineyards and makes low intervention wines using indigenous yeasts, no oenological substances and no filtration, so this Assyrtiko is sustainably grown. The shadow theatre inspired label reflects the balance of simplicity and complexity in this pure expression of indigenous Greek viticulture.

The 2022 vintage is made from 100% Assyrtiko. Before fermentation, the grapes undergo a brief cold maceration, then ferment in temperature controlled stainless steel with indigenous yeasts, followed by spontaneous malolactic conversion. After racking off heavy lees the wine spends three months on fine lees with regular bâtonnage and is stabilised naturally with tartaric treatment before bottling. It shows a brilliant golden colour with evolving aromas of pear, quince and gentle herbal notes of sage and bay leaf, and the poised palate has lively acidity and a long, refined finish. It pairs beautifully chilled with grilled fish, shellfish, seasonal vegetables, light pasta or poultry.
