Greywacke was founded by Kevin Judd, former winemaker at Cloudy Bay, in Marlborough, New Zealand. The vineyards for Wild Sauvignon Blanc are located in the Southern Valleys and central Wairau Plains near Woodbourne, featuring dense clayloams with varying gravel content, younger alluvial soils, and greywacke stones.

The 2023 Wild Sauvignon Blanc is made from 100% Sauvignon Blanc. Grapes were harvested both by hand and machine under cool conditions, lightly pressed, and cold-settled before racking into French oak barriques, a small percentage new. Fermentation was spontaneous with indigenous yeasts and lasted over six months, with occasional lees stirring. Approximately two-thirds underwent malolactic fermentation. The wine matured on lees for six months after leaving oak, then was bottled in September 2024. It shows aromas of rock melon, ginger, lime zest, and toasted coconut, with flavours of lemon curd and tangelo. Chalky oyster shell notes and a vibrant spine of acidity balance the lush, textural palate. Pairs well with shellfish, grilled fish, creamy risotto, or soft cheeses.
