Produced by Domaine François Cotat in Chavignol, one of the most celebrated villages of Sancerre, Caillottes comes from one of the most iconic and sought-after producers of Sancerre. François Cotat is considered a cult figure in Sancerre, with his wines highly allocated and admired by collectors worldwide for their purity, complexity and extraordinary ageing potential. Coming from a family with deep roots in Chavignol, François Cotat has built a reputation for producing some of the most authentic and terroir-driven expressions of Sancerre, with wines that are often discussed alongside the great white wines of Burgundy for their depth and ability to evolve over decades. The Caillottes vineyard takes its name from its distinctive small limestone stones, rich in fossil deposits, which provide excellent drainage and heat retention while contributing to the wine’s signature precision, elegance and mineral character.
Made from 100% Sauvignon Blanc, Caillottes 2024 is a beautifully pure expression of its Chavignol terroir. François Cotat follows a traditional approach, with spontaneous fermentation using indigenous yeasts, careful handling and ageing on fine lees to preserve texture, complexity and the natural identity of the vineyard. The wine shows an exceptional balance between concentration and freshness, with aromas of lemon zest, white peach, pear and white flowers layered with flinty minerality, chalk, fresh herbs and subtle saline notes. On the palate, it is precise and elegant, combining vibrant acidity, a silky texture and a long, mineral-driven finish. Although approachable in its youth, this is a serious Sancerre built for ageing, developing greater complexity and richness over time. It is a superb match for oysters, shellfish, grilled fish, goat’s cheese, fine seafood dishes and elegant white meats.
