The wine is made from 100% Pinot Noir, hand-harvested and fermented with indigenous yeasts in temperature-controlled vats. Ageing typically takes place for around 12 to 14 months in French oak barrels, with a proportion of new oak to add subtle structure without overpowering the fruit. The wine reveals delicate aromas of red cherry, raspberry, rose petal and earthy spice, supported by hints of savory underbrush and fine floral nuance, with a silky, layered palate and elegantly framed tannins. It pairs beautifully with roast duck, grilled lamb cutlets, pork tenderloin and mushroom risotto, as well as mild cheeses. The 2023 is already charming with decanting yet has the structure to age graciously over the next 8–12 years, gaining additional complexity.
