Domaine Cassiopée is a small biodynamic estate based in the Côte Chalonnaise in Burgundy, founded by former wine professionals Hugo Mathurin and Talloulah Dubourg. The domaine has quickly gained recognition for elegant, low intervention wines from carefully farmed vineyard parcels in Maranges and surrounding appellations. Le Saugeot comes from vineyards planted on clay limestone soils with stony marl, ideal for producing structured yet vibrant Pinot Noir. The cool continental climate and elevated vineyard exposures help preserve freshness and aromatic precision. The estate is certified organic and follows biodynamic principles with manual harvesting, native flora preservation and minimal cellar intervention. The 2023 vintage produced balanced wines with bright fruit and fine acidity.
Domaine Cassiopée Maranges Rouge Le Saugeot 2023 is made from 100% Pinot Noir, fermented with indigenous yeasts and gentle extraction to preserve finesse and terroir expression. Depending on the vintage, a small proportion of whole bunches may be included to add aromatic lift and structure. The wine is aged for around 12 months in older French oak barrels, avoiding excessive oak influence while allowing slow maturation. Bottled with minimal sulphur and little or no fining or filtration, it shows aromas of red cherry, wild raspberry and rose petals alongside earthy spice and mineral notes. The palate is fresh and finely textured with silky tannins and lively acidity. It pairs beautifully with roast poultry, duck, mushroom dishes and soft cheeses.
