do.t.e Skinphony Viognier Magnum

do.t.e (down to earth) is an experimental natural wine project led by winemaker Filippo Calabresi in the Cortona area of Tuscany, central Italy. The estate began working with small plots of vineyards around 2015, managing about four hectares without systemic pesticides or herbicides and favouring sustainable, low-intervention agriculture. Grapes ferment spontaneously with native yeasts and the wines are made with minimal or no additions. The vineyards are part of the diverse Tuscan terroir of rolling hills with clay and limestone soils and Mediterranean influences that help preserve aromatic intensity and balance in white varieties such as Viognier.

Skinphony Viognier 2023 Magnum is a natural, skin contact wine made from 100% Viognier. The grapes are harvested and then vinified with extended skin contact (around 5 days) before pressing, allowing flavours and texture to develop. Spontaneous fermentation using natural yeasts is then allowed to take place. The wine is typically aged in a mix of vessels such as old barrels, cement and clay for several months, creating a textured yet vibrant palate with aromas of ripe apricot, white flowers and citrus peel balanced by fresh acidity. Skinphony pairs well with seafood pasta, grilled white fish, roasted chicken or creamy soft cheeses and is best served lightly chilled to showcase its aromatic richness.
