Chevassu Fassenet Chardonnay 2021
Domaine Chevassu-Fassenet is a family owned estate in the Jura village of Menétru-le-Vignoble, where generations of the Chevassu and Fassenet families have cultivated vines in one of France's most distinctive wine regions. The estate farms its vineyards organically and follows a sustainable approach that respects the natural balance of the vineyard and surrounding environment. The Chardonnay vines are planted on the limestone, marl and clay soils that define the Jura, where the cool continental climate and fossil rich terroir produce wines with freshness, precision and marked mineral character. The wines are generally considered vegan friendly.
Chevassu-Fassenet Chardonnay 2021 is made from 100% Chardonnay. The grapes are gently pressed before fermentation with indigenous yeasts, followed by approximately 12 months of ageing on the fine lees in oak barrels, adding texture and complexity while preserving the purity of the fruit. Aromas of ripe apple, pear and citrus are complemented by notes of white flowers, toasted almonds, honey and subtle spice. The palate is elegant and well balanced with vibrant acidity and a long mineral finish, making it an excellent accompaniment to roast chicken, creamy poultry dishes, grilled fish, Comté cheese and mushroom based recipes.
