Cesconi Olivar 2020

Cesconi is a family-run winery located in Pressano, Trentino-Alto Adige, Italy. With a winemaking tradition dating back to 1751, the estate is now led by the fourth generation. The vineyards are situated at 350 metres above sea level, with south and southwest exposures on soils rich in clay and limestone. The estate practices organic viticulture, certified by Siquria, and is transitioning towards biodynamic methods. The wines are vegan-friendly, crafted without the use of animal-derived fining agents.

The 2020 Olivar is a blend of Chardonnay, Pinot Grigio, and Pinot Bianco. The grapes are hand-harvested and undergo fermentation with indigenous yeasts in large oak barrels and used barriques, where they remain for about ten months. The wine offers aromas of ripe stone fruit, citrus, and white flowers, with a subtle smoky character. On the palate, it is fresh and mineral, with balanced acidity and a long, floral finish. This wine pairs well with seafood, light pasta dishes, vegetable dishes, white meats, and creamy sauces.
