Burn Cottage is a celebrated biodynamic estate in Central Otago’s Cromwell Basin on New Zealand’s South Island, founded in 2002 by Marquis and Dianne Sauvage with winemaking input from Burgundian influenced consultant Ted Lemon. The estate’s vineyards are farmed with a strong focus on soil health and ecosystem balance, producing expressive cool climate Pinot Noir on free draining soils of schist, gravel and silts in the Bannockburn sub-region. Sustainable viticulture, low yields and meticulous fruit selection define the house style. The Single Vineyard bottling comes exclusively from Burn Cottage’s own estate vineyards, farmed biodynamically to encourage soil vitality and site expression.

The Pinot Noir Grapes for the Burn Cottage Single Vineyard 2021 are hand harvested and fermented with a proportion of whole bunches to enhance structure and aromatic complexity. Fermentation is gentle, followed by maturation in French oak barrels for approximately 12 months, with a modest 18% of new oak. The wine shows lifted aromas of wild cherry, red berry, spice and subtle floral notes, leading to a refined palate with fine tannins, savoury depth and bright acidity. Elegant and balanced, it pairs beautifully with roast duck, lamb, game birds or earthy mushroom dishes and has the structure to age gracefully for 10-12 years.
