Description

Benoît Chauveau comes from a family of winegrowers and took over part of his parents’ vineyards in 1995, later adding his grandparents’ vines. Today, the family estate covers around 17 hectares in the Loire Valley, including vineyards in Coteaux du Giennois, Pouilly-Fumé and Pouilly-sur-Loire. Silex comes from around 2 hectares of young Sauvignon Blanc vines in Saint-Père, planted on distinctive flinty clay. The domaine follows sustainable farming practices and holds HVE and Terra Vitis certifications.

Silex 2024 is a dry white made from 100% Sauvignon Blanc. The grapes are machine harvested and pressed immediately, using the first juice from the press. After around 48 hours of settling and racking, fermentation takes place in temperature-controlled stainless steel tanks at approximately 18-19°C to preserve the grape’s fresh aromatics. The wine then remains in stainless steel on its fine lees for 6-8 months. Fresh and precise, it combines grapefruit, white peach and pineapple with white flowers and a distinctive flinty mineral character. The palate is rounded but lively, with crisp acidity and a refreshing finish. Ideal with oysters, shellfish, grilled fish, fish in sauce and white meats.
