Shaw & Smith is a renowned family run winery in the Adelaide Hills of South Australia, founded in 1989 by cousins Martin Shaw and Michael Hill-Smith MW with a vision to craft refined cool climate wines that reflect their sites and season. The Adelaide Hills region is elevated and breezy, with a cooler growing climate that enhances natural acidity and aromatic intensity. Shaw & Smith’s vineyards are farmed using organic and sustainable practices and the estate is part of Sustainable Winegrowing Australia Vineyards. There is careful canopy work in the vineyards and soil care across diverse soils including sandy loam, red clay, quartzite and shale, creating elegant fruit.

The Shaw & Smith M3 Adelaide Hills Chardonnay 2023 is 100% Chardonnay, hand harvested and gently pressed before cool fermentation to preserve freshness and varietal purity. The wine is matured in French oak barrels for around nine months, adding subtle texture and complexity while retaining bright fruit character. It shows lifted citrus and stone fruit notes, delicate creaminess and fine minerality, finishing with balance and elegance. It pairs beautifully with seafood, roast chicken, creamy pasta dishes and soft cheeses, highlighting its refined cool climate style.
