Saint Maurice Cévennes Chardonnay 2023 is produced by Cave Saint Maurice, founded in 1924 and based in Saint-Maurice-de-Cazevieille in the northern Gard, at the foothills of the Cévennes in southern France. The region sits within the IGP Cévennes designation, where Mediterranean warmth is balanced by cooler mountain influences. Vineyards are typically planted on limestone and clay-rich soils with stony, well-draining plots that help retain freshness and aromatic purity. The cooperative works with a large network of organic growers,with a growing focus on environmental practices and low intervention viticulture.

The 2023 Chardonnay is made from 100% Chardonnay, harvested from selected hillside parcels. Fermentation is carried out in stainless steel to preserve fruit clarity, followed by short lees ageing to enhance texture without heavy oak influence. The wine shows aromas of citrus, white peach and green apple with subtle floral notes and a gentle mineral backbone. The palate is fresh and balanced, with crisp acidity and a clean, lightly rounded finish. It pairs well with grilled fish, shellfish, roast chicken, salads and light creamy pasta dishes.
