After the selective harvest, the musts ferment with the vineyard's own yeasts in stainless steel tanks. The young wine remains on the full yeast until bottling. This wine aging takes place without the addition of sulfur. Only shortly before bottling does the wine receive the necessary sulfur addition. So it matures the wine is on the lees for 6 months. 2023 was a very challenging grape harvest. The recurring rain during the Ripening time drastically altered grape health, causing yield losses. Nevertheless, exciting, ripe wines with moderate alcohol were created. Riesling is the predominant grape variety in Hochheim, traditionally in the Rheingau. At the locations, on However, Chardonnay and Pinot Noir also feel very at home in which lime dominates the soil.
