Prima Toro 2021

Prima Toro 2021 is a red wine from Bodegas y Viñedos San Román, Spain, a project founded by renowned winemaker Mariano García and his family. The vineyards are planted on sandy soils with clay subsoil and trained in both bush (vaso) and espalier, with vine ages ranging from approximately 10 to 50 years. The region’s hot continental climate and old vines help produce rich, expressive fruit.

The 2021 vintage is a blend of 85% Tinta de Toro and 15% Garnacha and other permitted varieties, fermented destemmed with indigenous yeasts. After vinification the wine was aged for 14 months in French oak barrels and large oak foudres of different ages, gaining subtle spicy and toasty complexity without overwhelming the fruit. The wine is garnet in colour with aromas of ripe red and dark fruit, cherry and spice, supported by supple yet structured tannins and persistent finish. Serve with grilled lamb, roast meats, stews or mature cheeses.
