Poderi Cellario is a family run winery in Carrù, on the western edge of Piemonte's Langhe hills, where Fausto and Cinzia Cellario continue generations of traditional winemaking. The estate is farmed organically, with vineyards rooted in limestone, clay and sandy soils that reflect the diverse terroir of the Alta Langa. Working with indigenous grape varieties and a low intervention philosophy, the winery relies on spontaneous fermentations and minimal additions to produce expressive, terroir driven wines. The wines are organic and generally considered vegan friendly.
Poderi Cellario E! Vino Rosso is a blend of Barbera and Dolcetto, bottled in a traditional one litre format as an approachable, everyday table wine. The grapes undergo spontaneous fermentation with indigenous yeasts and around 10 days of skin maceration before maturing in large 100-hectolitre cement vats, preserving freshness and purity without oak influence. Bottled unfined and unfiltered with minimal sulphur, the wine offers vibrant aromas of sour cherry, blackberry, wild berries and violet with subtle spicy notes. Fresh, juicy and beautifully balanced, it pairs perfectly with pizza, pasta, charcuterie, grilled meats and rustic Italian dishes, and is best enjoyed young, lightly chilled if desired.
