Taking place in the traditional lambrusco region of Emilia Romagna, this organic lambrusco is a true representation of the older methods of fermentation. In 2003 this winery was founded by Deny Bini on just half a hectare of land. Embracing organic methods of harvesting, the grapes are cared for and harvested by hand. A secondary fermentation occurs in the bottle, a practise virtually unseen in the modern day lambrusco. Denny's adventure in wine making started as a child helping his grandparents produce wine and then later in life he attended a farming school where they took trips to bordeaux which solidified his fascination. The challenges he faces on the countryside inspire him daily, ensuring his creativity is poured into every batch.

A deep lively red color, this lambrusco is filled with notes of plum and black cherries. On the nose it offers aromas of pomegranite and minerals found in the soils. Pairs perfectly with roasted dishes and fragrant cheeses.
