Pierre Paillard is a highly regarded grower Champagne producer based in the Grand Cru village of Bouzy in the Montagne de Reims, an area famed for producing some of the region’s finest Pinot Noir. The estate has been family owned since 1768 and is today run by brothers Antoine and Quentin Paillard, who have elevated the domaine’s reputation through meticulous vineyard work and precise, terroir focused winemaking. The vineyards are situated on south facing slopes with chalk rich soils over limestone, providing excellent drainage while retaining sufficient moisture to support vine health. Viticulture follows sustainable and environmentally conscious practices, with increasing focus on organic methods though not fully certified. The 2012 vintage in Champagne is widely regarded as outstanding, marked by low yields but exceptional concentration, balance and ageing potential.
Pierre Paillard La Grande Récolte Grand Cru 2012 is a vintage Champagne composed of approximately 50% Pinot Noir and 50% Chardonnay sourced from old vines in Bouzy. The grapes are hand harvested and fermented with indigenous yeasts, with a portion vinified in oak barrels to enhance complexity and texture. The wine undergoes extended ageing on its lees for around 8-10 years before disgorgement, far exceeding the minimum requirements, resulting in remarkable depth and finesse. In the glass it reveals aromas of ripe orchard fruit, citrus peel, brioche, toasted nuts and subtle spice, with a palate that combines richness and precision, supported by fine mousse and vibrant acidity. It pairs beautifully with shellfish, lobster, roast poultry and creamy dishes. Drinking beautifully now, it will continue to evolve over the next decade or more. The 2012 has received high critical acclaim, including scores of 95 points, with one critic noting it as “a Champagne of great depth, precision and remarkable persistence.”
