Paul Gosset is a grower-producer in the Vallée de la Marne in Champagne, working primarily with parcels around Aÿ and Mareuil-sur-Aÿ, an area known for its historic Pinot Noir and Pinot Meunier plantings on chalk, marl and clay soils. The vineyards benefit from a cool northern climate that preserves acidity and aromatic precision. Gosset farms with a strong focus on sustainable viticulture, working many parcels organically or close to organic standards, with manual vineyard work and low yields. The emphasis is on parcel selection and careful vinification to reflect the character of individual village sites.
Des Jours et Des Muids is based on the 2022 vintage (70%) and 2023 (10%), complemented by reserve wines from a perpetual reserve maintained from 2021 to 2024. A perpetual reserve is a solera-like system where reserve wines are continually blended across vintages, with a portion drawn off each year and replenished with new harvests, creating depth and continuity while preserving freshness. The wine is 90% Pinot Noir and is vinified in 12hl and 6hl vats before being aged in large oak muids and stainless steel. It is then aged on its lees for an extended period, typically around 24 to 30 months before disgorgement, with a low dosage of 1g/l. The wine shows red berry fruit, citrus peel and brioche notes with fine mousse, saline tension and a long mineral finish. It pairs well with seafood, poultry and refined savoury dishes.
