Ormiale 2021

Ormiale is a small scale Bordeaux project founded by Fabrice Domercq and Jasper Morrison, producing wines from carefully tended biodynamic vineyards in Côtes de Castillon and Côtes de Francs. The estate works with Demeter certified biodynamic farming, focusing on soil health, biodiversity and natural vineyard balance. The vines grow on clay limestone soils typical of the Castillon region, where the limestone influence brings freshness, elegance and mineral character to the wines.

Ormiale 2021 is a blend of 60% Cabernet Franc and 40% Merlot, hand harvested and completely hand destemmed before fermentation with indigenous yeasts. Produced with no added inputs during vinification, no fining and no filtration, the wine is aged for approximately 18 months in a combination of 225L, 500L and 600L oak barrels alongside stainless steel vats. Bright and elegant, it offers aromas of red and black berries, plum, violet, graphite and subtle herbal notes, with fine tannins and vibrant freshness. A beautiful match for roast lamb, grilled beef, duck, mushroom dishes and aged cheeses.
