Mylonas Winery is a family estate located in Keratea in the Attica region of Greece, with roots dating back to 1917. The modern winery was established by Stamatis Mylonas, focusing on indigenous varieties and sustainable viticulture. The vineyards lie on dry, rocky soils composed of limestone and sandy clay, with strong maritime influence from the Aegean Sea moderating the warm Mediterranean climate. Old bush vines are common, helping retain moisture and concentration. Vineyard practices are sustainable with minimal intervention, though not formally certified organic.

Mylonas Pétillant Naturel is typically made from 100% Savatiano, the traditional grape of Attica. The wine is produced using the ancestral method, where fermentation begins in tank and finishes in bottle, creating natural sparkle without added sugar or dosage. It is aged briefly on its lees for a few months before release, preserving freshness and vibrancy. The wine shows aromas of green apple, citrus and white flowers, with a lightly yeasty note. The palate is crisp and refreshing with fine bubbles, making it ideal with seafood, salads and light Mediterranean dishes.
