Mylonas Winery is a family estate based in Keratea in the Attica region of Greece, with winemaking roots dating back to 1917. Today it is run by Stamatis Mylonas, focusing on indigenous varieties and sustainable viticulture. The vineyards lie close to the Aegean Sea, where cooling breezes moderate the warm Mediterranean climate. Soils are predominantly limestone with sandy clay and rocky elements, contributing minerality and freshness. The estate follows sustainable, low-intervention practices in both vineyard and cellar, though it is not formally certified organic.
Mylonas Assyrtiko 2025 is made from 100% Assyrtiko, expressing the variety’s naturally high acidity and structure. The grapes are harvested early to preserve freshness, then fermented in temperature controlled stainless steel indigenous yeasts. The wine is aged on its fine lees for a short period, typically around 3 to 4 months, to enhance texture without masking its purity. It shows aromas of citrus, green apple and white flowers, with a saline, mineral edge. The palate is crisp and vibrant with a clean finish, pairing well with seafood, grilled fish, salads and light Mediterranean dishes.
