Monte Dall’Ora is a small family estate in Castelrotto, in the heart of Valpolicella Classica, with vineyards on the terraced hills around Castelrotto and San Pietro in Cariano. The vines are farmed organically and biodynamically, with a strong focus on biodiversity and working with the vineyard as a living ecosystem. Saseti comes from south-east facing terraces at 70-200 metres, planted on calcareous and calcarenitic soils of Eocene origin. The vineyards are trained in the traditional pergola veronese and include vines ranging from around 25 to 70 years old.
The 2025 Saseti is a blend of Corvina, Corvinone, Rondinella, Molinara and Oseleta, harvested by hand and fermented spontaneously with indigenous yeasts. Fermentation takes place in stainless steel and unglazed concrete, followed by a few months of ageing in the same types of vessel before bottling. Light and vibrant, it shows fresh cherry, sour cherry and raspberry alongside floral, minty and gently spicy notes. The palate is juicy and savoury, with bright acidity and soft tannins. An easy drinking Valpolicella that works particularly well with salumi, pasta, pizza, white meats, lighter dishes and even oily fish.
