Monte Dall’Ora Ripasso Superiore 'Sausto' 2023
Produced by Monte Dall’Ora in the Valpolicella Classica zone of Veneto, Sausto reflects the biodynamic, low-intervention philosophy of Carlo and Alessandra Venturini. The estate is based in the hillside vineyards west of Verona, where they farm according to biodynamic principles, treating the vineyard as a living ecosystem supported by biodiversity, cover crops and natural preparations. Their holdings sit on the traditional Valpolicella mix of limestone, basalt and clay-rich soils, with altitude and ventilation helping preserve freshness and aromatic precision even in more generous vintages.
Made from Corvina, Corvinone and Rondinella, the wine follows the traditional Ripasso method, where freshly fermented Valpolicella is refermented on the skins left from Amarone production, adding depth, structure and complexity while retaining freshness. The 2023 vintage is vinified with the estate’s minimal-intervention approach, using spontaneous fermentations and ageing in large Slavonian oak casks to preserve purity of fruit and site character. The result shows aromas of ripe cherry, blackberry and plum alongside notes of dried herbs, sweet spice and subtle cocoa. The palate is supple and layered, combining juicy red and dark fruit with gentle structure, fine tannins and a savoury, slightly dried-fruit complexity from the ripasso technique. Balanced and approachable, it offers more depth than classic Valpolicella while remaining fresh and versatile, pairing well with roasted meats, pasta dishes and aged cheeses.
