Marie Thibault is an independent grower based in the Touraine appellation of the Loire Valley, working with a natural, low intervention philosophy. Her vineyards are farmed organically without synthetic chemicals, with a strong focus on soil health and biodiversity. The region benefits from a temperate climate influenced by both Atlantic and continental conditions. Soils of flint, clay and limestone contribute freshness, tension and mineral character to the wines. Fermentations are carried out with indigenous yeasts and minimal additions, and the wines are typically unfined and unfiltered, making them suitable for vegans.

Premier Nez 2021 is an expressive white wine made from Chenin Blanc. It undergoes fermentation and around 14 months ageing in neutral barrels, allowing texture and complexity to develop without overt oak influence. The wine shows aromas of baked apple, yellow pear and citrus, with subtle notes of honey and walnut. The palate is rounded yet fresh, with a fine balance between richness and acidity, leading to a long, mineral finish. It pairs well with roast poultry, creamy cheeses and dishes featuring mushrooms or root vegetables.
