This collaboration is with our friends in Black Donkey Brewing in Ballinlough, Co. Roscommon. Husband and wife team Richard Siberry & Michaela Dillon have been producing some amazing beers since they set up approximately 10 years ago. Their range of Irish Farmhouse Ales (saisons), wild yeast beers and cask aged specials are well worth seeking out. 14 Y.O. Single Grain matured in first fill Bourbon for 9 years 2 months-NEOC (STR- Heavy Char, ex Red Wine Cask) for 15.5 months and first fill Bourbon for over 3 years 7 months. On the nose it offers aromas of oak spice, wood shavings, vanilla and light florals. On the palate it has flavors of cedar wood, brown sugar and marmalade with a long spiced caramel finish.
