La Dame de Onze Heures 2021 Saint-Emilion Grand Cru
La Dame de Onze Heures is one of Saint-Émilion’s smallest estates, with just 1.2 hectares under vine, created by Clément Fustier with a philosophy centred around organic farming and permaculture. The vineyard is managed as a living ecosystem, with no herbicides, no synthetic treatments and permanent natural cover between the vines. Planted on clay limestone soils, the 60 year old vines benefit from the limestone rich terroir of Saint-Émilion, producing wines with freshness, elegance and a strong sense of place.
La Dame de Onze Heures Saint-Émilion Grand Cru 2021 is a blend of 90% Merlot and 10% Cabernet Franc. The grapes are hand harvested and naturally vinified with gentle extraction and no added inputs, before ageing in Stockinger foudres, amphorae, terracotta jars and stoneware eggs. The wine displays aromas of ripe cherry, blackberry, plum, violet, cedar and subtle spice. Silky and refined with beautiful freshness and depth, it pairs wonderfully with roast lamb, grilled beef, duck, mushroom dishes and mature cheeses.
