Produced in the Jura region of eastern France by Jean-François Ganevat, one of the area’s most revered artisan winemakers. Based in Rotalier in the Côtes du Jura appellation, the domaine is farmed biodynamically with meticulous low intervention methods. The Savagnin grapes come from marl and schist rich soils that provide mineral intensity and depth, while the cool continental climate preserves freshness and structure. The wine is produced without sulphite additions
Fermented with indigenous yeasts and aged for an extraordinary 84 months on lees in a combination of demi muids and stoneware amphorae. The wine is bottled unfiltered with no added sulphites, allowing the terroir and long ageing to shape its complex character. Aromas of preserved lemon, ripe apple and walnut combine with waxy texture, spice and smoky mineral notes. The palate is concentrated yet vibrant with saline tension and a long savoury finish. It pairs beautifully with Comté, shellfish and rich poultry dishes.
