Produced by Henri Chauvet in Boudes, Auvergne, Qui Sait 2022 is a highly distinctive sparkling wine that showcases both the creativity of the producer and the versatility of Gamay. After establishing himself as one of the leading figures in Auvergne’s renaissance, Chauvet has gained a devoted following for his low-intervention wines, crafted with a focus on organic farming, native fermentations and minimal cellar manipulation. While deeply rooted in the volcanic terroirs of the Massif Central, he is equally known for pushing stylistic boundaries, and Qui Sait is one of his most original creations. Produced in tiny quantities, it reflects a philosophy that values patience, precision and individuality over convention.
Made from 100% Gamay as a blanc de noirs sparkling wine, the grapes are whole-bunch pressed to avoid colour extraction, producing a wine of remarkable finesse from a red variety. Fermentation takes place with indigenous yeasts, followed by secondary fermentation in bottle and an extended lees ageing of approximately 36 to 42 months before hand disgorgement. This unusually long élevage brings a level of complexity rarely encountered in natural sparkling wines, layering aromas of citrus peel, baked apple and orchard fruit with notes of brioche, toasted almond, pastry cream and crushed stone. The palate combines vibrant acidity with a fine, persistent mousse and a chalky mineral tension, while the extended lees contact adds depth, texture and savoury complexity. Elegant, distinctive and highly age-worthy, it offers a compelling alternative to more conventional traditional-method sparkling wines.
