Greywacke was established in 2009 by Marlborough pioneer Kevin Judd, widely respected for shaping New Zealand Sauvignon Blanc’s international acclaim. Named for the distinctive Greywacke stones found in local soils, the estate sources fruit from sustainably managed vineyards across Marlborough’s Wairau and Southern Valleys, characterised by free draining alluvial gravels and clay loams. The focus is on minimal intervention, capturing site expression.

The Greywacke Wild Sauvignon Blanc 2022 undergoes wild fermentation, meaning fermentation is driven by native yeasts present on the fruit and in the winery rather than selected cultured yeasts used in regular fermentation. This approach can add complexity and textural depth. The wine is matured on lees to build richness, showing lychee, mango, herb and citrus notes with bright acidity and a savoury finish. Serve with seared scallops, miso glazed salmon, roast chicken with fennel or fresh seafood with citrus accents.
