Jean-François Ganevat Savagnin Le Carré 2021 is produced by Domaine Ganevat in Rotalier, in France’s Jura region. The estate is run by Jean-François Ganevat and his sister Anne, and is widely recognised for biodynamic farming and highly individual, low intervention winemaking. The wine comes from old vine Savagnin grown on classic Jura soils of grey Lias marl and limestone scree, which contribute structure, salinity and depth. Vineyards are farmed organically and biodynamically, with extremely low yields and meticulous hand work in the vineyard.

100% Savagnin vinified with indigenous yeasts, then aged for around three years in large oak demi-muids under a topping-up (ouillé) regime to preserve freshness rather than oxidation. It is bottled with minimal intervention and no unnecessary additives, in line with the domaine’s philosophy. The wine shows aromas of ripe pear, citrus peel and stone fruit alongside hazelnut, white flowers and a distinct smoky mineral edge. The palate is structured and precise with vibrant acidity, a layered textured mouthfeel and a long, saline finish. It pairs beautifully with Comté cheese, poultry, mushrooms and rich fish dishes.
