Fattoria di Vaira Vincenzo Bianco 2021
Fattoria di Vaira is one of Italy’s largest biodynamic farms located in the hills of Molise overlooking the Adriatic Sea. The estate cultivates vegetables, grains, olive oil, cheese and grapes on biodynamically farmed soils rich in sand and clay, with Mediterranean climate influences. The vineyard work and winemaking are low intervention, and this wine reflects the purity of its biodynamic origins.
The 2021 Vincenzo Bianco is a white blend of Falanghina and Trebbiano, with a short skin maceration on part of the Falanghina giving it a golden hue and texture. Grapes are hand harvested, fermented with native yeasts and matured on fine lees in stainless steel with natural malolactic fermentation. Bottled without filtration or fining, it shows aromas of white flowers, apricot and peach, with light tannins, refreshing acidity and a mineral edge. This medium bodied wine pairs beautifully with grilled seafood, fresh salads, light pasta dishes and soft cheeses, offering lively character and drinkability.
