Viticulture in Brézème, on the primarily limestone marl south facing steep hillsides, dates back to Roman times. Éric Texier has been instrumental in reviving the vineyards. This 100% organic Roussanne, from vineyards planted in 2003, undergoes spontaneous fermentation with native yeasts in concrete vats. Matured for 6 to 8 months on its lees, it doesn't see any sulphur addition until bottling. It shows the full elegance of Roussanne from Brézème, often expressed by a touch of salinity accompanying intense fruit aromas.
