Domaine Simonin Pouilly Fuisse Aux Charmes 2023

Domaine Simonin is a small, family-run estate based in the heart of the Mâconnais in southern Burgundy. They have been crafting wines that express the purity of Chardonnay for generations focusing on careful vineyard management and minimal intervention. Domaine Simonin’s Pouilly-Fuissé "Aux Charmes" 2023 comes from the Aux Charmes climat, one of Pouilly-Fuissé’s most prestigious premier cru sites. Planted on steep, south-facing slopes with limestone and clay soils, the vineyards benefit from excellent sun exposure and natural drainage, producing grapes with pronounced minerality, refined aromatics and balanced acidity.

The wine is made from 100% Chardonnay with fermentation in a combination of stainless steel and neutral oak to preserve freshness and enhance texture. It is aged on fine lees for 10-12 months with regular bâtonnage to build mouthfeel and complexity. Aromas of white flowers, ripe pear and citrus mingle with subtle toasty notes. Silky and vibrant on the palate it pairs beautifully with shellfish, grilled fish or creamy pasta dishes.
