Les Écrins is produced by Domaine de la Borde in Pupillin, in France’s Jura region. The estate is run by Julien Mareschal, a respected grower known for precise, terroir-driven wines from high-altitude Jura vineyards. The domaine is farmed organically with a strong focus on biodiversity and minimal intervention, working steep limestone and marl slopes typical of Pupillin. These soils, combined with a cool continental climate, give the wines tension, salinity and aromatic precision. Grapes are hand harvested and vinified with native yeasts and no unnecessary additions.

The 2018 vintage is made from 100% Savagnin from a single vineyard parcel and follows a long, traditional Jura élevage combining both oxidative and non-oxidative ageing. It is aged for around two years in oak with topping up (ouillé), followed by approximately three years without topping up under voile, before a further two years of bottle ageing prior to release. This layered approach builds complexity and depth while preserving structure and balance. The wine shows aromas of dried apple, citrus peel and walnut alongside spice, curry leaf and pronounced saline minerality. The palate is powerful yet precise with firm acidity, textured richness and a long, savoury, oxidative finish. It pairs beautifully with Comté cheese, mushroom dishes, roast poultry and rich seafood.
