The 2023 Legado Chardonnay is crafted using traditional methods to preserve the purity of the fruit. The grapes are destemmed and lightly pressed to avoid extracting bitter phenolics. The juice undergoes fermentation with ambient yeasts in used French oak barrels with 30% undergoing malolactic fermentation. The wine is aged for 12 months in used French oak barrels, contributing to its creamy texture without overwhelming the fruit. The resulting wine offers aromas of lemon and orange zest, green apple and subtle vanilla, with a medium-bodied palate and a refreshing, mineral finish. It pairs beautifully with seafood dishes, creamy pasta or goat cheese.
