David Moret Saint Romain 2016

Domaine David Moret, established in 1999 in Beaune, Burgundy, is renowned for crafting exceptional white wines, particularly from the Côte de Beaune. The Saint-Romain appellation, situated in a side valley to the west of Auxey-Duresses, is known for its high-altitude vineyards that benefit from optimal sun exposure, producing wines with freshness and minerality. The estate employs sustainable farming practices and the wines are produced with minimal intervention to enhance the expression of terroir.

The 2016 Saint-Romain is a Chardonnay that underwent alcoholic and malolactic fermentation in 50% new French oak barrels, followed by aging for 14–18 months. This method imparts a creamy structure and subtle spice to the wine. Tasting notes include aromas of honey, nutmeg, and a touch of butter. On the palate, it offers oak flavors, ripe fruit, and a pure, spicy finish with notable concentration. This wine pairs beautifully with poultry, shellfish, and creamy cheeses.
