Domaine David Moret, established in 1999 in Beaune, Burgundy, is renowned for crafting exceptional white wines, particularly from the Côte de Beaune. The Saint-Romain appellation, situated in a side valley to the west of Auxey-Duresses, is known for its high-altitude vineyards that benefit from optimal sun exposure, producing wines with freshness and minerality. The 2016 Saint-Romain is a Chardonnay that underwent alcoholic and malolactic fermentation in 50% new French oak barrels, followed by aging for 14–18 months. This method imparts a creamy structure and subtle spice to the wine. Tasting notes include aromas of honey, nutmeg, and a touch of butter. On the palate, it offers oak flavors, ripe fruit, and a pure, spicy finish with notable concentration. This wine pairs beautifully with poultry, shellfish, and creamy cheeses.
