Harvested at night, the grapes come to the cellar at about 12C for short skin maceration to extract the aromas and character of each grape variety without taking colour. This is followed by a gentle pressing (pneumatic press). Fermentation starts in demi-muids and concrete tanks then aging for 8 months.

Elegant nose with floral notes (cherry blossom). Full on the palate with jucy pink grapefruit notes, a touch of acidity and a fine touch of wood. Matches with white meats, lamb confit with garlic, duck or Roquefort cheese. Recommended serving temperature 12-14C.
