Château La Rabotine is a historic estate in Sury-en-Vaux in the Sancerre appellation of the Loire Valley, founded in 1600 and now farmed with strong environmental respect and organic principles. The Sauvignon Blanc vineyards lie at around 200 metres on classic Terres Blanches clay-limestone and Caillottes limestone soils, which bring freshness, elegance and mineral character to the wine. These sustainably managed vineyards express the pure terroir of Sancerre.

Made from 100% Sauvignon Blanc, the wine is fermented in temperature-controlled stainless-steel tanks for about one month and aged on its lees for six months, followed by around two months in bottle before release. It shows aromas of elderflower, citrus and pineapple, with a fresh, creamy palate and lively acidity. Ideal with seafood, shellfish, goat’s cheese and light salads.
