Château Chasse Spleen is a historic Bordeaux estate in the Moulis en Médoc appellation on the Left Bank of France’s Gironde. Viticulture at the estate dates back centuries, and it gained its modern reputation in the 19th century. The château has been owned by the Merlaut family since 1976 and is today managed by Céline Villars Foubet with her husband Jean Pierre Foubet, continuing a tradition of meticulous, sustainable vineyard practices. The estate’s vineyards cover gravel, clay and limestone soils, including the well-drained parcels on the slopes often referred to as the Grand-Poujeaux hillside, which provide excellent drainage, airflow, and concentration in the grapes. Farming is sustainable, with High Environmental Value certification, hand-harvesting and an emphasis on biodiversity.

Château Chasse Spleen 2020 Half Bottle is a classic Moulis en Médoc Bordeaux blend of approximately 49% Cabernet Sauvignon, 42% Merlot, 6.5% Petit Verdot and 2.5% Cabernet Franc. The grapes are vinified in temperature-controlled vats with roughly a month of maceration on skins, then aged for 12–15 months in French oak barrels, around 40% new. The wine shows deep garnet colour with aromas of blackberry, cassis and subtle cedar, and a medium- to full-bodied palate with fine, silky tannins, balanced acidity and a lingering finish. Pairs beautifully with grilled lamb, roasted beef, rich stews and mature hard cheeses.
