It opens with lifted aromas of ripe pear and poached quince, gradually giving way to a more herbal register, revealing notes of wild sage, dried achillea, and a whisper of bay leaf.

Before the fermentation, a cold maceration takes place for almost 2 days, depending on the year. After that, the must ferments in stainless steel tanks in controlled temperature with indigenous yeasts and no oenological substances added. Spontaneous malolactic fermentation. The produced wine racked for the very dense sediments and undergoes battonage on fine lees for three months. No protein stabilization, only tartaric stabilization.
