Today the domaine farms around 12 hectares, with Vincent working alongside his children Ghislain and Étiennette. Les Clos is the estate’s crown jewel: the largest of Chablis’ seven Grand Crus, occupying a steep south-westerly slope of Kimmeridgian marl and limestone. Dauvissat’s parcel is around one hectare, including vines more than 50 years old. The domaine has farmed biodynamically since 2002, although without certification, and the wines are made with minimal intervention in the cellar. The combination of tiny production, exceptional terroir and Dauvissat’s standing has made Les Clos one of the most sought-after and collectible Chablis bottlings.\u003c\/p\u003e\n\n\u003cp\u003eMade from 100% Chardonnay, the 2015 Les Clos was harvested immediately after the hailstorm that struck the Grand Cru hillside on 1 September, producing only around 30 hl\/ha. The wine was raised in barrel, with Dauvissat using slightly less new oak than usual in this vintage, allowing the concentration and mineral character of the fruit to take centre stage. At 11 years old, it is now beginning to open, although this remains a serious, tightly structured wine rather than an evolved white Burgundy. Lemon, preserved citrus and white flowers sit alongside oyster shell, wet stone, chalk, almond, subtle spice and a distinctly saline finish. The palate has impressive density and extract, with fresh acidity and a long, stony persistence. It is drinking very well now with air, but should continue to develop through the 2030s and potentially well into the 2040s.
