The vineyards for Felsen II are planted on limestone, gravel and mineral rich soils shaped by the warm Pannonian climate and cooling lake influences. Farming is carried out manually with no herbicides or synthetic chemicals, and the wines are typically vegan friendly as they are bottled unfined and unfiltered. The 2023 vintage produced energetic wines with excellent freshness and aromatic precision.\u003c\/p\u003e\n\n\u003cp\u003eFelsen II 2023 is made from Syrah and vinified with minimal intervention. The grapes are hand-harvested and fermented spontaneously with indigenous yeasts, often including partial whole bunch fermentation for added lift and structure. The wine is aged for around 10 to 12 months in large old oak barrels, allowing gentle evolution without masking the fruit. Bottled unfined, unfiltered and with minimal sulphur, it shows aromas of sour cherry, blackberry and violets alongside peppery spice and earthy mineral notes. The palate is vibrant and finely textured with fresh acidity and a long savoury finish.
