Today, brothers Mauro and Roberto Prandi continue the estate’s traditional approach, combining careful vineyard work with a strong focus on biodiversity, sustainability and minimal intervention. The vineyards are farmed organically, without herbicides or pesticides, and the estate encourages natural vegetation between the vines. Botero comes from San Rocco Seno d’Elvio, where Nebbiolo is planted on sandy, calcareous soils with marl and sandstone. The east-south-east exposure and moderate altitude provide a good balance of ripeness and freshness.\u003c\/p\u003e\n\n\u003cp\u003eMade entirely from Nebbiolo, Botero is fermented with naturally occurring yeasts in large concrete and wooden tanks, followed by around 25 days of maceration with the cap submerged. The wine then spends time in concrete and oak before bottling and a further year of bottle ageing at the winery. It is an expressive, approachable style of Nebbiolo, with red cherry, wild strawberry and rose complemented by liquorice, herbs, spice and subtle earthy notes. Bright acidity keeps the palate fresh, while fine tannins provide structure without making the wine austere.
