The Stella Dorata vineyard lies at 250 metres with an east-south-east exposure, planted on sandy, calcareous soils with marl and sandstone. The family places particular emphasis on biodiversity, cover crops and working the vineyards without herbicides, and the estate holds Equalitas certification for sustainability.\u003c\/p\u003e\n\n\u003cp\u003eStella Dorata 2024 is made from 100% Arneis, from vines around 20 years old, with a yield of approximately 7,000 kg per hectare. The grapes spend a night after harvest before being gently pressed in a traditional basket press, followed by spontaneous fermentation with indigenous yeasts in the cooler part of the cellar. The skins remain in contact with the must for three days in stainless-steel vats, after which the wine spends 4-5 months on its lees, with malolactic conversion blocked. It is then kept in stainless steel for six months and given a further year in bottle at the winery before release. Floral and expressive, it combines ripe pear, yellow apple, apricot and chamomile with citrus, mineral and savoury notes.
